Crispy Fried Chicken
Fried chicken is a staple in many households because it’s so versatile. You can eat it on a sandwich or on its own and you can add any flavours that you want. You really can’t go wrong! All you need is:
- 4 lbs of chicken (you can cut up a whole chicken yourself or use 4 lbs of your favourite cut, like these drumsticks)
- 4 cups of all purpose flour
- 2 tablespoons of garlic salt or garlic powder
- 1 tablespoon of paprika
- 3 teaspoons of pepper, divided
- 2 ½ teaspoons of poultry seasoning
- 2 large eggs
- 1 ½ cups of water
- 1 teaspoon of salt
- Oil for deep frying
In a large dish, mix 2 ⅔ cups of flour, garlic salt or powder, the paprika, 2 ½ teaspoons pepper, and the poultry seasoning.
In another dish, beat eggs and water. Add the salt, the remaining flour, and the leftover pepper.
Dip the chicken in the egg mixture, then place in the flour mixture, a few pieces at a time. Apply evenly on both sides.
In a deep-fat fryer, heat oil to 375°.
Fry the several pieces of chicken at a time until golden brown. This should take 7-8 minutes on each side. If you’re using a thermometer, it should read 165°.
Drain on paper towels.
Buttery Biscuits
Nothing compares to a delicious home cooked meal with fresh biscuits on the side. These buttery, flaky biscuits are easy to make.
You will need the following ingredients:
- 2 cups of all purpose flour
- 1 tablespoon of sugar
- 1 ½ teaspoons of salt
- ½ teaspoon of baking soda
- ½ cup of cold butter
- ½ cup of buttermilk
- ¼ cup of milk
- 2 tablespoons of melted butter to brush on top
Preheat your oven to 400.
Mix together flour, sugar, salt, baking powder and baking soda. Slice the butter into cubes and use a pastry blender to fold butter into the dry mixture (if you don't have a pastry blender, use two knives and cut the butter in) until there are no large chunks of butter.
Add buttermilk and milk and stir with a spoon until dough forms.
Roll out to 1/2 inch thick on a floured surface. Cut biscuits with a biscuit cutter or glass and place on a lightly greased baking sheet.
Bake for 22 to 24 minutes or until tops are light brown.
Remove from the oven and finish by brushing the melted butter on top.
The Best Breakfast Sandwiches
Breakfast sandwiches are perfect because they’re multiple breakfast foods in one: English muffins, eggs, and your choice of meat.
To make your own, you will need:
- 4 tablespoons of softened butter
- 4 English muffins (or as many as you would like)
- 4 slices of bacon (you can never have too much)
- 4 eggs
- ½ cup of water
- Cheese slices
Start by toasting the English muffins.
Add two teaspoons of butter to a non-stick skillet over medium heat.
Cook the bacon on both sides until it’s your preferred level of crispness.
Butter both halves of the English muffins and then add a tablespoon of butter to the same skillet that the bacon was cooking in.
Using either quart-sized canning lids with the screw side up or an egg ring, crack the eggs into the mold. Break the yolk with a fork and pour about 1/2 cup of water into the skillet. Place a lid on top.
Cook for about two minutes until the eggs are set.
Gently remove the eggs from the rings, and begin to arrange your McMuffin.
Wrap each breakfast sandwich with foil or parchment paper and wait about 30 seconds before serving to ensure that the cheese is a little melted.
